「豊後牛」と「冠地鶏」が味わえる「七輪炭火焼 啓修庵」が2022年4月29日(金)に大分県湯布院市にグランドオープンしました
由布院の景勝地、金鱗湖からほど近い場所に位置する旧九州湯布院民芸村敷地内の歴史ある古民家をリノベーションした店内で、地元おおいたの厳選食材を心ゆくまで楽しめます。
啓修庵は、有名な温泉地、由布院の旧九州湯布院民芸村敷地内にあります。
九州湯布院民芸村は、昔ながらの建物を利用した工房、美術・博物館、飲食店が集まった施設でしたが、閉鎖に伴い、その多くの貴重な建物は取り壊される予定でした。
持続可能な田舎を実現するためには、古き良きものを後世へ残すだけではなく、より現代に合うように手を加えることが重要だと考え歴史ある古民家をリノベーションし、啓修庵として蘇らせました。
啓修庵は、提供する食材や提供方法にもこだわってあります。
新鮮なうちにお客様にお召し上がりいただきたいため、地元の生産者から食材を仕入されガスコンロではなく、あえて日本古来の調理器具である七輪を使い炭火焼が食せます
また、フードロスをできる限り抑えるため、平日は20名様、土日祝日は40名様限定でのご案内とされているそうです。
